the garden

Our garden has grown a ridiculous amount since my last post back at the end of May. Not only do we have this plot in the community garden, I have a tomatillo plant on our patio (these are the green “tomatoes” to make salsa verde!), 2 zucchini plants growing in our neighbors front flower bed, and a trash can full of potatoes! Anthony makes fun of me on the trash can potatoes but all the reading I’ve done says our potato yield will be higher by doing this.

week in review

*I decided to take a break from facebook last Monday and I’m so glad I did. I ended up having to log in twice to remove myself from emails because I was being bombarded but I got off immediately after doing that. You know how much extra time I’ve had in that weeks time? I think I’ll slowly make my way back on there, but I’m determined to not let it suck all the time out of my day again!

*Anthony and I finished watching Season 4 of Dexter last week – can we say holy smokes?!?!?! Anthony was a nervous-wreck the entire time we were watching around the last half of the season. Sucks that we have to wait until the middle of August before Season 5 comes out on DVD – the suspense!!!!!

*Since summer TV is sucking right now, we started watching Weeds. I figured we’ll make our way through all the Showtime original series before the end of the summer! I’ve never smoked anything in my life, but Saturday night as we were making our way through three of the episodes I started getting the munchies! Nothing could satisfy my cravings – maybe it was a combination of needing something nutritious and the psychological aspect of watching the show!

*We went into New Hope on Friday night to watch the FREE weekly fireworks but they ended up being cancelled because of the crappy weather that threatened earlier in the day. Luckily, the trip wasn’t ruined because we had awesome company, incredible food at Havana, and yummy gelato at Bucks County Cluster’s Caramel Corn.

*The sewing machine got a workout last week as I was finishing up a baby shower gift. I also found one tutorial on pinterest which lead me to a blog that has a brilliant tutorial on folding your fabric in a nice, neat way. I spent hours doing this to all my fabric and it looks so awesome in the closet now!

*The garden is looking awesome!! Just picked our first yellow squash of the season, and I’ve started to see tomatoes growing. I love knowing that almost all of our veggies came from a seed that I planted, watered, and babied to get to this point (forget the fact that the sun does most of the work!!)

*I’ve been making my way through The Green Beauty Guide and it has been eye-opening! I seriously have so many dog-ears on this thing (and it’s a library book – sorry for all those who come after me, I promise I haven’t marked up anything else!). The thing I love most about the book is she rates products on a 3 leaf system (example: she lists out three different facial toners the best with a 3 leaf beside it) as well as gives homemade recipes too.

*I taught a Zumba class (side note: I’m now licensed to teach Zumba Basic which is what most people think of when they think Zumba!!) to a group of high school and college-age camp counselors on Saturday. It was rejuvenating for me, even if half of them didn’t want anything to do with it. I will be going back in July to teach 3 days of electives of ZumbAtomic (for kiddos) at the same camp in Ewing. I know it’s going to be a blast!

*I’ve been meaning to get my hair trimmed for weeks (possibly months) but I didn’t want to spend the money to get it cut. Wednesday morning after my shower I decided to trim it myself. One thing lead to another and I ended up taking over 2 inches off. When Anthony got home he was shocked that it “didn’t look bad!” Thanks for the confidence honey!

Some iPhone photos over the past few weeks starting with a photo taken across the Hudson River before a surprise anniversary party I photographed and photos from our short weekend trip to Coney Island (stayed in Staten Island for my Zumba Basic training) followed by a smorgasbord of other things including using a macro lens for my iPhone to get my ring shot + our adventures in New Hope on Friday.

Danae - I was watching Weeds when I was pregnant with Bailey, and decided it was time to take a break from it when one night I had a dream that I was a drug dealer and an FBI agent was working with me….lol!

gardening update

I’ve been slacking on updating my gardening tales. Much has happened since our community day at the first of April. And truth be told, I took these photos a few weeks ago (I think it was right before it rained and was overcast for it seemed like forever!!) and everyone has grown even more! I try to get out there at least once a day, but there are times it just doesn’t happen. Thankfully as I’ve read in several books, seeds just want to grow. They will do what they can to grow, even if we humans neglect them a bit.

So far we have planted two different kinds of carrots, basil, rosemary, onions, bush beans, two tomato plants, okra, squash and lettuce. I also have two zucchini plants going in our neighbors front area (they don’t mind and we are sharing the farm share with them this year – I figured if it grows something they can have some too!!) along with some more onions and tomatillos. I just got in some organic heirloom potatoes that I am hoping to put into a trash barrel to maximize space and growth!

Jaidean - Looks great! We had the worst hail/rain/thunderstorm last week and my plants didn’t seem to like that very much. I’m hoping they will come back!

homemade cookies!!!

Last week I went on a huge baking spree as I hosted our final book club for the school year. Maybe I shouldn’t share my “secret” recipes…but they are below for you!

First up are the double chocolate chip cookies (first photo on the left) adapted from Real Simple. Looks like lots of people had mixed reviews on these, but I’ve never had issues with them. We end up baking them all and then putting them in a zip top bag in the freezer. Pull out one or two when you want a cookie, warm it up in the microwave for 15-20 seconds! I’m not sure how long you should keep in the freezer as they are typically gone within 2 weeks.

Ingredients
1/2 cup unsalted butter, at room temperature
1/2 cup granulated sugar
1/2 cup brown sugar
1 large egg
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk-chocolate chips

Directions
Cream the butter and both sugars in a large bowl with an electric mixer on high speed.
Lower to medium speed and add the egg and vanilla.
Sift together the flour, cocoa, baking soda, baking powder, and salt.
On low speed, add the dry mixture to the butter mixture. Beat until fully incorporated. Fold in the chocolate chips.

At this time, I put it in the refrigerator overnight to chill (cover). When I’m ready to bake in the morning, I pull container out of the frig, and turn oven to 350 degrees. The dough will be tough to manipulate, give yourself about 10 minutes before handling but not much longer.

Form the dough into approximately 1 1/2-inch balls. Place on parchment- or foil-lined baking sheets, 2 inches apart.
Bake until the centers are just set, about 12 minutes. Let cool on sheets for 5 minutes, then transfer to wire racks. (as you can see from my photo, mine do not spread much at all).

Homemade Oreos (or a version of Whoopie Pies) (second/third photo)

I’ve stopped buying store-bought cake mixes, so coming up with a comparable mix recipe was a challenge on these (hence why they turned into more Whoopie Pie than Oreo!). I did a search for devil’s food cake recipes and took bits & pieces of them all. This will need more work on my end!

Another recipe that called for a store-bought cake mix. It didn’t turn out the way I would want, so I’m not going to share my exact recipe yet! You can visit the above link to get the recipe. I didn’t add shortening/Crisco to the frosting either and that was perfectly fine (I actually halved the frosting recipe as I knew I didn’t have enough cookies for a full batch so I did the full amount of butter and omitted shortening.). Overall they were yummy cookies!

earth day 2011

In honor of my previous Earth Day posts (2009 and 2010) as well as my green post last month, I’m here to share a few more things we are doing. Please feel free to post anything you’ve changed to honor our Earth. Also, visit EarthDay.org to make a pledge (it’s FREE!)

  • Last week while my mom was in town, as my birthday present, I received 5 pieces of All-Clad Stainless Steel cookware. I am in love with them! Why on earth did I have nonstick for so long? Now the dilemma is what to do with the nonstick pots and pans. They are in great condition. Anyone want them? I’ll sell them at a great price – there are 8 pots/pans + 6 lids!!
  • I believe we are approx. 95% plastic-free in our kitchen (minus things we buy at the store like yogurt, butter, etc.). This week, the Vietnam Vets came to pick up the last of our plastic leftover containers. I removed Suran Wrap, and replaced it with a natural wrap from Whole Foods.
  • I’ve removed all toxic cleaning chemicals from our home. We now use baking soda, vinegar, borax, lemons, Ecover and Seventh Generation products among many others. Our steam mop is still going strong so no chemicals are being placed on our floors at all.
  • I also have switched to making my own deodorant and using Nature’s Gate toothpaste. I know that harmful chemicals are not entering my body through my armpits or mouth!
  • We are COMPOSTING!!! Anthony thinks I’m crazy but we keep the pot (which is a chamber pot that I got from the antique mall in Hopewell) under our sink. I try to empty it out every other day or so. Luckily, with our community garden, they have a great compost pile going that we add.
  • We have our little garden + we are participating in a CSA again this year to cut down on our carbon footprint. I also have a house plant in almost every room to reduce the toxins in our air, acting as a natural air purifier. And who doesn’t love to see something living indoors?
  • Although it’s not a stated policy in our home, I try to not eat meat of any kind several times a week. Being Catholic and observing Lent, Friday’s have been the designated day for the past few weeks along with other meals throughout the week. If you need some recipes for meatless meals, check out Meatless Monday!
  • Did you know that you can drop off your #5 plastics (yogurt, plant containers, etc.) at Whole Foods and other participating locations? Check out Gimme 5 for all the details! They turn them into toothbrushes, plates, and other kitchen items.
  • I haven’t purchased one yet, but have you heard of iGo? You can charge your electronics (phone, laptop, etc.) on the go without having to be plugged into the outlet! This saves on phantom power and your electric bill!
  • Instead of going out to purchase everything new, I have been hanging out at antique malls and thrift stores to see if I can find items that are on my wish list. I’ve been successful on several fronts, from new everyday drinking glasses, to baskets to hold our glass containers, to picture frames and more.
  • I also utilize the library systems like they are going out of style! Which is a good thing since I love to read!!! It’s been a long time since I’ve bought a book new and when I do get a book, it’s either from a book sale or from paperbackswap.
  • Random tidbit I read recently: Did you know that you shouldn’t smash the crap out of aluminum soda cans if you are planning to recycle them? The machines at the recycling plants blast air to sort out the different components. If your can is smashed it’s heavier and the air won’t be able to blast it into the right bin. Just a food for thought!
